Hummus. It's what for Friday's lunch


I needed lunch for Friday.
There was nothing leftover in the fridge that was suitable or that I had a hankering for.
So, I made a quick batch of hummus.
Cut up some carrot and celery sticks and grabbed an apple.
That is how simple hummus is.
Simple enough to make up before you leave for work.



Hummus

1 can (15 oz) chickpeas (garbanzo beans)
1 lemon, juiced
1/4 cup tahini
4 to 6 tablespoons extra-virgin olive oil
1 large clove garlic, cut into bean size pieces
1 teaspoon cumin
1/2 teaspoon paprika
1/4 cup liquid from can of beans
salt to taste

1. Drain chickpeas. Retain liquid. You'll need this. Rinse chickpeas. Pour into food processor with the metal blade attached. Add tahini, 4 tablespoons olive oil.

2. Cut lemon in half. Squeeze juice into food processor. Peel garlic clove. Toss into food processor. Add cumin and paprika.

3. Process until a soft creamy paste, adding olive oil or the bean liquid if needed. Taste and add salt or more lemon juice.

4. Serve with cut veggies or warmed pita bread. I also use hummus in place of mayonnaise on sandwiches. It is a great thing to take to a party or picnic.

Serves 6 or so.

If you want to get fancy add sundried tomatoes that have been packed in oil, roasted red peppers, or black olives to the food processor. More garlic is also very nice.

It doesn't get any easier than that. Pretty sweet, huh?

This would make a great meatless Monday lunch.

  1. I find this recipe oddly funny. I find my costly attempts to make hummus even funnier.
    But I have a food processor now! And once I take it out of the box, I will make the hummus!

  3. Mmmmmmm, hummus. Love me some hummus.

    I made homemade hummus ONCE after searching bloody well everywhere for tahini. I needed about a tablespoon if I recall correctly. I never made hummus again and the massive jar of tahini sat in my fridge for over 4 years until I finally threw it out this spring.

    At which point I thought, "I really feel like making some hummus!"

    I don't get me, either.

  5. Just made this at home. I will even consent to eat celery if it is covered with this stuff! Delish!
